Barkertown Farms is a family-owned and operated farm in western New York that produces limited batches of one hundred percent pure, wood-fired maple syrup.

Maple Production

Maple syrup is made by collecting sap from sugar maple trees during the spring when temperatures fluctuate between freezing nights and warmer days. The process begins with tapping the trees using spouts, which allows the sap to flow into collecting buckets or tubing. Once collected, the sap is transported to a sugar house where it is filtered and boiled down. During boiling, excess water evaporates, concentrating the sugars and transforming the sap into syrup. This process requires careful monitoring to achieve the perfect consistency and flavor. Finally, the syrup is filtered again, bottled, and ready to be enjoyed!
